Matcha Granola



  • 1 1/2 tbsp of matcha and a little more for sprinkling
  • 2 cups of rolled oats
  • 1 cup of nuts/seeds
  • 1/2 cup of unsweetened coconut flakes
  • 2 tbsp of melted coconut oil (or half a stick of melted butter)
  • 1/4 cup of brown sugar
  • 1/4 cup of honey
  • 2 tsp of vanilla extract
  • 1/2 tsp of salt

Pre-heat oven to 270 F. Melt coconut oil or butter and whisk in brown sugar, vanilla extract, and honey. Set aside. Pulse nuts in a food processor until it is chopped into small pieces. In a large bowl, combine nuts, seeds, oats, matcha and salt. Then drizzle the oil/butter mixture over oats and nuts. Toss to combine. Spread oat mixture on a baking sheet lined with parchment paper. Bake for an hour; stirring every 15 minutes. Let cool. If you like, you can sprinkle more matcha powder over the granola. Also if you like your granola sweeter, you can add chocolate chips and dry fruits. Enjoy!
